Traditionally the base of the canape is made from stale bread which can be innovated by cutting, frying, slicing and dicing to create an assortment of exquisite and interesting shapes. These bread pieces then are garnished with choice gourmet toppings. The key ingredients are typically the bread, a spread (mayonnaise, butter, cream cheese) and the topping perched. Much like the Italian aperitivo, canapes are designed to be enjoyed with beverages and company. Served on a silver platter, the 18th Century French started to serve these mouthfuls to their guests and soon, the trend crossed the pond.
